The Cerrado Mineiro region of Brazil is internationally recognized for its unique terroir, shaped by high plateaus, well-defined seasons, and a stable climate that allows for exceptional precision in coffee cultivation.

This specialty coffee lot is a carefully selected blend from three prestigious farms: Fazenda Medeiros, Fazenda Sapé e Lavrinha, and Fazenda Olhos D’Água. Managed by dedicated producers Marley Magalhães Apolinaro, José Maria de Castro, and Paulo Henrique Silva, these farms are located at altitudes reaching up to 1,136 meters above sea level, where fertile red and yellow Latossolo soils provide an ideal foundation for high-quality Arabica production.

The heart of this coffee’s identity is the Yellow Bourbon variety, a celebrated mutation known for its golden cherries and exceptional natural sweetness. Due to its high fructose content, Yellow Bourbon cherries develop a cup profile marked by honey-like sweetness, smooth texture, and remarkable balance.

To highlight these characteristics, the beans undergo semi-washed and pulped natural processing methods. These techniques involve drying the coffee while keeping part of the fruit mucilage attached to the beans, enhancing the natural body and creating deeper flavors reminiscent of mocha, while maintaining a clean and elegant finish.

Quality is ensured through strict selection standards, with the lot carefully sorted to a consistent screen size of 16/18. Producers from this region are recognized for their professionalism, combining generations of agricultural knowledge with modern farming techniques to preserve both quality and environmental balance.

Through careful management of natural resources and adaptation to the local climate — characterized by stable temperatures around 21°C — the Apolinaro, Castro, and Silva families consistently produce coffees with remarkable sweetness, structure, and complexity, representing the finest expression of the highlands of Minas Gerais, Brazil.
