At La Claudina, every batch of Geisha is treated with meticulous attention, and Honey processing is one of the farm's specialties. The cherries are selectively harvested only at full maturity, then undergo controlled tank fermentation, where the team adjusts time and temperature to highlight the floral and fruity character of the Geisha variety.
After fermentation, the cherries are pulped, but the mucilage is left entirely on the bean—the key element of Honey processing. This sugar-rich layer remains attached during drying, allowing a slow and natural caramelization of the sweet compounds.
Drying takes place on raised beds in thin layers with regular turning to ensure uniform development and to protect the aromatic delicacy of the Geisha. The result is a coffee with clear sweetness, a silky texture, and a complex flavor profile featuring notes of mango, apple, honey, yellow plum, and flowers.
