Hidden deep in the highlands of Uraga, in the renowned Guji region of Ethiopia, lies the village of Yabitu Tume. Here, smallholder farmers cultivate coffee on garden-like plots located near their homes and often shaded by native trees such as Enset, Albizia, and Acacia. These farms, situated at elevations between 1,900 and 2,300 meters, benefit from fertile clay soils and a cool climate that allows the coffee cherries to ripen slowly, developing exceptional sweetness and complexity.

The Uraga district is gaining increasing popularity and is home to numerous processing stations. With Yabitu Tume, one of the stations that consistently delivers some of the region’s most refined coffees year after year has been discovered, making it one of the preferred sourcing options in this district.

After selective harvesting, the ripe cherries are delivered to the local processing station on the same day. The coffee is depulped using a disc pulper and then undergoes a fermentation process lasting 36 to 48 hours. After fermentation, the parchment is soaked in clean water to improve clarity and structure in the cup. Drying takes place on raised beds for 6–7 days, depending on sun and wind exposure, until the beans reach a stable moisture level of 10–12%. The discarded coffee pulp is turned into organic fertilizer, closing the cycle and enriching future harvests.
