Chiapas Region, Mexico: Chiapas is located in southern Mexico, bordering Guatemala, and is renowned for producing high-quality coffee. The region offers ideal conditions for coffee cultivation, with elevations ranging from 900 to 1,750 meters above sea level and fertile volcanic soils. Huixtla, a town located approximately 1.5 hours from the coffee-producing region, serves as a strategic hub for receiving coffee from the surrounding mountains.
Cultivation: Chiapas Altura Organic coffee is grown on Finca Paraiso, Finca Holanda, and Finca San Pedro, farms managed by Providence Mills. These farms are organically cultivated, meaning that environmentally friendly agricultural practices are used to protect the environment and ensure the superior quality of the coffee. Saida Soraya Henaine, the current owner of Providence Mills, transformed these farms and the mill into an organic operation 24 years ago.
Agroecological practices: Providence Mills uses environmentally friendly methods to cultivate coffee, including natural pesticides and crop rotation practices to maintain healthy soil. The farms also have an apiary to support pollination and honey production. Saida Soraya Henaine has built infrastructure to support the workers, including schools, dining facilities, and housing for coffee workers.
Coffee varieties: The coffee grown on these farms includes varieties such as Bourbon, Sarchimor, Catuai, and Caturra. These varieties are known for producing complex flavors and rich, beautiful aromas.
Processing: The coffee is processed using the washed method and sun-dried, which helps preserve its delicate aromas and citrus acidity.
