The history of coffee in Mexico begins in the 18th century, when the first plants were brought from the Antilles and cultivated in the state of Veracruz. Although it was not widely adopted at first, coffee gradually became a key crop for Mexico’s agricultural economy, especially in the southern regions. In the 19th century, German and Italian migrants contributed to the expansion of plantations, and in the 20th century, small local producers—often from indigenous communities—turned coffee into a vital source of income. Today, Mexico is one of the world’s largest producers of Arabica coffee, with an industry largely built on small farms and sustainable practices.

In this story, the Chiapas region holds a central place. Located in the far south of Mexico, near the Guatemalan border, Chiapas is known for its mountainous landscapes, fertile soils, and ideal microclimates for growing specialty coffee. Altitudes ranging from 1,200 to 1,600 meters allow for the slow ripening of cherries, resulting in dense beans with complex aromatic profiles. Coffee from Chiapas is prized for its balance, natural sweetness, and delicate notes of chocolate, fruit, and spices.

At the heart of this region lies Finca Las Chicharras, a farm managed by E-Café Chiapas—a social initiative with a clear mission: to produce high-quality coffee, support local communities, and fight poverty through education. The farm spans over 150 hectares and reaches altitudes of up to 1,600 meters. Varieties such as Bourbon, Marsellesa, Maragogype, and Guacamaya are cultivated here, and processing is carried out meticulously using both washed and natural methods.

A remarkable aspect of E-Café is the School Project, an educational initiative launched in 2017 directly on the grounds of Finca Las Chicharras. Noticing the lack of activities for the children of seasonal workers, the founders built a school that offers free access to education in a safe and stimulating environment. The project reflects a deep commitment to sustainable development and care for the community’s future.

The coffee from this washed lot at Finca Las Chicharras is a true expression of these values. The cherries are handpicked, carefully selected, and processed using the washed method, resulting in a clean, balanced, and vibrant cup.
