The Story of Yellow Tea
Yellow tea is a rarity in the world of tea, appreciated for its delicate character and meticulous production process. It is harvested during a short period in early spring, which is why it is produced in relatively small quantities.
Similar to green tea, yellow tea undergoes an additional stage of controlled oxidation, allowing it to develop a more delicate flavor and deeper aroma, with gentle sweet and slightly floral notes.
Its unique production process includes a step known as “yellowing,” during which the leaves are covered and allowed to gently steam. This process helps improve the texture, reduce astringency and enhance the aroma, giving yellow tea its distinctive smoothness.
Because oxidation is extremely light, the leaves develop a beautiful golden hue, while the resulting infusion is bright, silky and wonderfully smooth.
In China, yellow tea has traditionally been regarded as an imperial tea, once reserved for nobles and officials. Its golden color was associated with the imperial yellow worn by Chinese emperors.
