The Story of Yellow Tea
Yellow tea is a rarity in the world of tea, prized for its delicate character and meticulous production process. It is harvested during a short season in early spring, which is one of the reasons it is produced in relatively small quantities.
Similar to green tea, yellow tea undergoes an additional stage of controlled oxidation, allowing it to develop a more delicate taste and deeper aroma, with gentle sweet and floral notes.
Its distinctive production process includes a step known as “yellowing,” during which the leaves are covered and allowed to gently steam. This process helps improve their texture, reduce astringency and enhance their aroma, giving yellow tea its characteristic smoothness.
Because oxidation is very light, the resulting tea has a soft, silky character, with a bright golden infusion and a remarkably smooth mouthfeel.
In China, yellow tea has traditionally been regarded as an imperial tea, once reserved for nobles and officials. Its golden color was associated with the imperial yellow worn by Chinese emperors.
