The cocoa beans are fermented and dried, not roasted.

Region: Hermanas Mirabal
Genetics: Local varieties and hybrid genetics
Flavor profile: Sweet taste with notes of strawberry, rosemary, coffee, and rum
Fermentation: 7 days in wooden crates, followed by drying on wooden beds

This cocoa bean selection comes from the Hermanas Mirabal province in the northern region of the Dominican Republic, an area recognized for its fertile soils, balanced humidity, and rich biodiversity. The farms are small family-owned properties, passed down through generations, where cacao is cultivated using agroforestry systems under the natural shade of native trees.

The Tanama Collection is a profound tribute to the Mirabal sisters, iconic figures of female resistance and the struggle for freedom. This collection brings together history and flavor, featuring three cocoa origins with distinct identities and remarkable character.

Despite the widespread adoption of commercial hybrid genetics in the region, this family farm has remained faithful to tradition, continuing to cultivate cacao trees inherited through several generations. Through carefully adapted post-harvest methods for each lot, the farmers are able to reveal exceptional complexity in the cocoa, highlighting aromatic nuances that reflect both the local terroir and the dedication invested in every single bean.
