Fermentation: The complete natural fermentation process lasts approximately 6 days. During this period, microorganisms feed on the sugars in the cocoa pulp, creating a natural anaerobic environment that contributes to the development of complex flavors. The beans are then sun-dried.

Ghaura Estate is an internationally recognized cocoa farm located in West Sumba, East Nusa Tenggara Province, Indonesia. Known for its unique terroir and exceptional cocoa quality, the estate has become a reference point in the global craft chocolate industry.
Covering approximately 815 hectares, Ghaura Estate is a family-owned plantation that grows cocoa in rich volcanic soils under the intense tropical climate characteristic of Sumba Island. These natural conditions contribute to the development of a distinctive aromatic profile highly valued by chocolate makers around the world.
The cocoa beans from Ghaura Estate received the prestigious Cocoa of Excellence Award in 2015, placing them among the finest cocoa origins globally. This recognition strengthened the farm’s reputation as a producer of premium cocoa with full traceability and consistent quality.
The cocoa is cultivated within an agroforestry system, surrounded by more than 136 hectares of native trees that support biodiversity and protect the island’s ecosystem. The farm is actively involved in reforestation projects, agricultural education, and initiatives aimed at supporting the development of local communities.
